Fat Gold was founded in 2017 when Kathryn and her partner took over a three acre olive farm in the East Bay. Fat Gold's first harvest took place in 2017.
Pineapple Collaborative
Pineapple Collaborative’s olive oil, crafted in collaboration with Kathryn Tomajan, uses a blend of organic Koroneiki, Arbequina, and Arbosana olives grown by the Ricchiuti family at ENZO Olive Oil Company.
Pot d'Huile
Kathryn sources USDA organic, COOC certified extra virgin olive oil for Pot d’Huile. She also consults on the development and sensory assessment of new products.
ENZO Olive Oil Company
Kathryn works with the Ricchiuti family, 4th generation farmers in California’s San Joaquin Valley. She oversees production quality, assists with harvest operations and supports product development for the ENZO Olive Oil Company product line.
Long Meadow Ranch
Kathryn worked with Long Meadow Ranch’s wine making team to make the 2019 olive oil vintage.
California Olive Oil Video Series
In 2015 the California Olive Oil Council produced four educational videos about the liquid gold of the golden state. In the video series, I serve as the face and voice of California olive oil industry. The videos introduce consumers to the California olive oil, how extra virgin olive oil is produced, tips for choosing an extra virgin olive oil and how to use it at home.
Olive Milling - Australia
For two seasons I worked with Joan and Peter McGovern at Camilo Olives in Victoria, Australia. I operated Camilo's two OlioMio mills, managed olive processing for the Camilo Estate and clients, and developed an operations manual for the mill. In addition, I conducted sensory assessments, assisted with the blending of oils and created recipes using Camilo's product line, .
The Olive Oil Tasting Course, New York City
I designed an immersive five-day olive oil tasting course in collaboration with Italy’s leading olive oil tasting school, members of the American olive oil community and New York City’s most distinguished chefs.
